Coumarin is a naturally occurring chemical compound that is banned by the U.S. FDA as a food additive. It is found in plants such as cinnamon, mint, and celery. The most common variety in the world is Chinese cinnamon, which has a high coumarin content, but there is no problem using it for flavor adjustment or eating in small amounts. Ceylon cinnamon is relatively safe and currently has the greatest potential for clinical development in blood sugar regulation. Cinnamon is one of the oldest and best known spices. Cinnamon contains high amounts of highly effective polyphenol antioxidants. The antioxidants in cinnamon have anti-inflammatory properties and may help reduce your risk of disease. Cinnamon, used in doses ranging from 1-6 grams or 0.5-2 teaspoons per day, has been shown to reduce fasting blood sugar levels.
Preparation method
Ceylon cinnamon is harvested by cutting the stem of the Cinnamomum verum tree and peeling off the outer bark.
The inner bark, the cinnamon layer, is carefully peeled into long strips.
The cinnamon sticks will be left out in the sun to dry. This drying process may take several days, during which time the cinnamon sticks will naturally curl.
After drying, the cinnamon sticks are sorted by size and quality.
Then rub it gently with your hands to form the characteristic cinnamon stick shape.
